
Brewing Green & White Tea
The ideal temperature for green Tea is around 175F & 185F for white tea. Bring your kettle to a boil and let it sit off heat for a bit to lower the temperature. Water just off the boil is also acceptable.
Teapot
Can steep up to 2 times
16oz Teapot (473ml)
2 heaped teaspoons (6-8g) to 16oz (473ml) water for 3 minutes.
24oz Teapot (710ml)
3 heaped teaspoons (10-12g) to 24oz (710ml) water 3 minutes.
32oz Teapot (946ml)
4 heaped teaspoons (14-16g) to 32oz (946ml) water for 3 minutes.

Gongfu style
Can steep up to 8-10 times
100-125ml Gaiwan or Pot
2 heaped teaspoons (5-8g) to 100-125ml wate for 5-10 seconds.
With each steep add an extra 5-10 seconds.

Brewing Red, Black & Oolong Tea
The ideal temperature for red/black tea is around 212F (boiling) & 190F for oolong tea. Bring your kettle to a boil and let it sit off heat for a bit to lower the temperature. Water just off the boil for oolong is also acceptable.

2 heaped teaspoons (6-8g) to 16oz (473ml) water for 3-5 minutes.
24oz Teapot (710ml)
3 heaped teaspoons (10-12g) to 24oz (710ml) water for 3-5 minutes.

*If you take milk with your tea consider steeping for the maximum amount of time. We don't recommend heating the milk up as it changes the flavor of the tea too drastically.
